I have already talked of the great nutritional values of hemp seeds in an article but I haven’t made a recipe yet, so here we are, let’s make together these Falafels with hemp seeds, lentils and kale!
I love lentils and I think they go well together with the nutty flavor of hemp seeds. This recipe is not difficult but it takes a bit of time to prep the different ingredients that later will be mixed all together to make some delicious balls.
So let’s go with the falafels with hemp seeds!
Time: 1,5 hours
Suitable for vegetarians and lactose free.
For 22/24 balls:
250 grams of lentils
100 grams of hemp seeds
1 white onion
200 grams of kale
4/5 spoons of bread crumbs
one spoon of curry
Start with the lentils. You don’t need to keep them in the water like the beans before cooking them, they cook easily even without having soaked them. Immerse them in a pan with cold water and start to cook them. It should take 20/30 mins.
Now take the kale, separate the leaves from the stems and then wash them. Fill a pot with cold water and when it starts to boil throw the kale inside.
After 5 minutes of cooking, take a skimmer or a spider and pull the leaves out of the water. Squeeze out all the water you can from the leaves.
Peel the potatoes, soak them in the water and then chop them. I prefer to peel and cut them so they are easier to work with. Boil some water and add the potatoes, they should cook in 20 mins.
Meanwhile the lentils are ready, drain them and leave them in the sink. They have to drain as much as they can so there’s not too much water when later you’re mixing them.
Take one white onion and chop it very finely.
When the potatoes are ready, drain their water and dry them with a cloth.
Now all the ingredients are ready to be mixed; pour them in a large bowl, add one egg, the bread crumbs, the hemp seeds, one spoon of curry, salt as needed and black pepper. Wear gloves and mix all the ingredients with your hands until they are well amalgamated.
From this blend start to make balls and flatten them, go on until the mixture is done. Turn on the oven taking it to 200 degrees. Pour some olive oil on the balls and bake them. In 10/15 mins the falafels with lentils and hemp seeds should be ready.
Use a colorful salad to serve with the balls and it will be a joy for your palate but also for your eyes. Buon appetito!!!
